Sometimes as mothers we just need to hear an encouraging word. Right? Sometimes we just need to hear the truth instead of the lie that creeps into our minds. The one that whispers, “I have no idea what I’m doing.” Or, “I can’t handle the enormity of tasks that I’m required to master today!”.
That last one was me. It crept in while I was preparing a Pinterest crock pot meal. You know the kind. The one I searched for with the words, “Easy Crockpot Meals”. Gathering my ingredients from this side of the kitchen to that. Shutting cabinet doors quietly, so as not to wake the sleeping toddler. Finding the last bit of counter space that was not littered with dishes and remnants from two meals prior. Why does that kill me to admit! Overwhelm set in. And I almost let myself believe I couldn’t handle making this simple meal that I know I will be thanking myself for at 4pm today. Had that kitchen been clean, I know the task would have felt simpler. But it wasn’t. And it didn’t. So I am fine with that. But I just felt this need to reverse my thinking right at that moment, and tell myself that, “It will get done.” And to just “effing” let it go.
So, here’s my encouraging word for you if you at all relate to this. Just effing let it go! That is a real term. If you have to use the true curse word to get your point across. Do it! Sometimes it helps. You are doing a fantastic job holding your family together. Getting the kids ready for school, feeding them, teaching them, loving them, working out of the home, working inside the home, listening to their thoughts, holding them close when they ask, having conversations with them, showing them you care, telling them stories and reading to them. Even if you feel like it may not be enough, IT IS. YOU ARE.
Live in that truth friends. And continue to speak positivity to your souls. You are making a difference in the lives of your tribe.
And in case you want a delicious crockpot meal at your fingertips. Here you go. This one can be found here! http://www.bevcooks.com/2015/08/slow-cooker-chicken-and-pinto-bean-burritos/?m . Also, go follow this lovely lady on IG @bevcooks. She’s hilarious and you won’t regret it!
Slow Cooker Chicken and Pinto Bean Burritos (4-6 burritos)
1.25 lb chicken thighs
14oz chicken breasts
1 (10oz) can hot enchilada sauce
1 (16oz) can pinto beans, drained and rinsed
4 garlic cloves
1 small white onion
2 tsp chili powder
2 tsp cumin
1 tsp ground coriander
*pinch of salt and pepper
*4 large tortillas
*2-3 cups shredded cheddar chees
*homemade pico for topping
In a slow cooker, combine the chicken, enchilada sauce, beans, garlic, onion and spices. Cook on medium for 4-6 hours. Using forks, lightly shred the chicken right in the slow cooker. Let it sit for a few minutes so the chicken can absorb all the heaven-ness around it.
Okay, loves. Wishing you a joyful day!
